There are claims they originated in Brooklyn. I could see it as being something some employee tried just to use a small scrap of dough and then, through some trial and error, they caught on...I kinda wonder where garlic knots came from and if they aren't a somewhat regional thing. We don't call them by an Italian name, and I've never seen them in Italy or in an Italian restaurant in Europe. That at least suggests that they aren't authentic. It wouldn't shock me if they're something that was developed in restaurants in the South perhaps as an "Italianish" equivalent of biscuits or dinner rolls.

I see them on a lot of menus in my part of the State...and they were commonly brought to the table at one pizza joint to eat while you waited on your order...
