I've not made it to Karam's yet. So little time, so many tex-Mex joints.

Didn't Enchiladas y Mas used to be located at 26th and I-35? I ate there a couple of times and it was slammin'.
 
just got the number 5 at enchiladas y mas. ******* allsome. i cant say better than maudies, but very solid. chips and salsa was much better than maudies though. very spicy, which i like.
 
My favorite Tex-Mex in Austin are Nuevo Leon, Matt's, El Arroyo and Chuy's.

My favorite in SA are Rosarios, Marios and La Fogata.
 
Rosario's is a good pick... has the trendiness of a Chuy's, with a little more emphasis on authenticity since it's a homegrown SA establishment. Just a few blocks south of downtown. They also make a mean watermelon mojito as I recall.
 
My favorite trendy Tex-Mex places to see and be seen are Nuevo Leon, Matt's, El Arroyo and Chuy's.

Now my favorite to eat at are Enchiladas Y Mas, Amaya's, Dario's and La Reyna.
 
Amaya's Taco Village in the Capital Plaza shopping center.

Regardless of your choice of entree (they're all good), make sure and get the corn tortillas.
