Recommend some documentaries...

Grass I'm surprised it hasn't been mentioned yet.

When I first read the title I was going to say Cannibal Holocaust.
 
Dancing Outlaw is funny as hell.

I'll second or third Dogtown and Z boys. I've never been on a skateboard in my life and I watch it every time I stumble across it. Very interesting look at mid 70s surf and skate culture.
 
"Paper Clips" - A documentary about a middle school attempting to collect 6 million paper clips to illustrate the number of jews killed by the Nazis.
 
"Harlan County USA" (1976) is a hell of a doc, definitely worth watching

"Dont Look Back" (1967) about Bob Dylan is good

"Nanook of the North" (1922) directed by Robert Flaherty is considered to be documentary film number one, so it is worth seeing
 
Fantastic list--about the only ones not mentioned would be:

Visions of Light--doc. on some of the classic cinematographers of all time--ones that worked with bergman, hitchcock, etc.

Russian Ark--guy goes thru the Hermitage museum in russia...in every room are people dressed in time period of the art. Also, whole thing filmed in one extemely long take. The "making of " section is similar to one in Winged migrations where they explain how it was filmed.

The Man Who Bought Mustique--Absurd british guy shows you around the island he feels he was cheated out of...all the while berating his staff and the rest of the island.
 
American Hollow

Filmmaker Rory Kennedy, traveled to Kentucky and lived with the Bowling family, which has made an isolated hollow its home for seven generations.
 
I'm not sure if it's a documentary, biography, or just a history program but "Men of Iron" is a pretty interesting story -one British engineer (whom you have probably never hear of) pioneered so many of the advances of the Victorian age.
 
A few about NASA and the space program that are just great:

"In The Shadow of The Moon" - Really a series documentary about the Apollo program. I was born in 1961, so I am old enough to remember when we landed on the Moon, but if you are younger I can't think of another way to really understand what it meant to actually put a man on the moon.

"Moon Machines" - Another series about the space program: each program takes on a specific program: The Saturn V Rocket, Lunar Rover, Suits, Navigation, Command Module, etc.

Both series have been showing on the Science Channel here in Houston. I can watch these shows over and over again.

"The Boys and Girls Guide to Getting Down" is also pretty cool.

TRINITY AND BEYOND (The Atomic Bomb Movie)
I caught this a few weeks ago on HDNet Movies. I turned it on, because there was nothing else on. I must admit that I couldn't turn away from it. It's amazing the size of the explosions they were able to create. Definitely something worth checking out.
 
The Unforeseen....great documentary on an Austin based land developer.

Cocaine Cowboys..Someone already mentioned it but it is worth checking out.
