Real Mexican, not Tex Mex

My middle school daughter is having a Mexican fiesta day at school, and she wants to bring some real Mexican food to the party. She told me what the other kids were bringing, and I made the mistake of saying that all that stuff was really Tex Mex. I suggested queso made with real Mexican cheese, and she responded, "But, Dad, you said tortilla chips were Tex Mex

She likes pico de gallo. Is that Mexican or Tex Mex?

Does anyone have a suggestion that's both easy and likely to appeal to 13 y.o. midwesterners?

Pico de gallo is prominent throughout N. Mexico and S. Texas..it's the genuine thing.

You can get by with a Mexican cheese melted in a corn tortilla too! These quesadillas are common in Mexico.
 
It's not easy, and it probably wouldn't appeal to 13 year olds, but the above cabeza de cabrito is real Mexican.
 
earl77 is the early favorite in my book, but probably not in my daughter's opinion.

I would pay to see the reaction of some of her friends when the dish is uncovered.
 
My lovely, petite mexicana wife ordered this at restaurant La Fogata in Nuevo Progresso, and then proceeded to remove the brains out of a little crack in the skull using a fork and ate them on a corn tortilla with a little salsa. My gringo friends in attendence from North Carolina almost fainted!

i eat almost anything, but i dont know if i could eat meat and brain off of a skull. at least not sober
 
i like the mexican soda idea. dude, its middle school, the kids would probably prefer mcdonalds to any of these suggestions. dont go crazy fancy.
 
It's not just any goat, it's a baby goat. Saw a few of those sacraficed growing up. My grandpa would then leave the head on a nail on the back patio to dry out. mmm...memories.

As for true Mexican you could try Mole. It's fairly easy just make sure you use the Dona Maria brand.
 
Queso fundido or flameado-- about the same thing

baked asadero cheese-- usually with chorizo

cuta piece and eat in a corn tortilla

a friend of mine in El Paso told me muenster is a good sub-- I tried it-- fooled me
 
i thought educated people (which, yes i would call most Mexicans, especially those in America who would be married to a poster) stopped eating brains awhile ago with all those nasty little prion...
 
If you've ever had a gordita de picadillo made by a little abuelita at a roadside stand in south Texas, then you've eaten real Mexican food.
