Queso Queso Queso

I prefer the taste of serrano peppers to jalapenos, but you'll need to chop them very fine and warn the milder palates in your group that it may be pretty spicy. Also, be sure to press a garlic clove in there.

Try serving it Xochitl brand chips, they're thin (wouldn't do well with thick, stringy recipes) but extremely tasty. Pronounced so-cheel, and you can get them at HEB with and without salt....if they're not sold out! Great flavor, it's all we buy anymore.
 
block of veelveta
block of grated cheese
coffemate creamer- choose your thickness
instead of rotel- i buy fresh salsa at central market or something in the refrigerated section of the store
some butter/margerine
couple of chopped jalapenos
guacamole
in a pot or in a crockpot

add meat if you like but this is FTW everytime. F$&k rotel
use salsa- whats even better is if you have time pick up your favorite salsa from a restraunt and throw some guac in there. $$$$$$
 
That's it, I'm making a huge batch of queso for the UT/CU game tomorrow night.

I'll let you know which recipe I select as the winner, and how it turns out!!!
 
1 block of velveeta (32 oz)
2 cans cream of mushroom soup
2 cans rotel (whichever level of hotness you desire)
1 small onion chopped
1-2 tsp minced garlic

Saute onion and garlic in a little olive oil... add rotel and cream of mushroom soup... stir well... cut velveeta into small cubes (1 inch or so)... add velveeta to mixture... turn down heat to low and simmer until velveeta is completely melted... stir occasionally.

For leftovers, you can make a casserole with either rice or macaroni mixed with the queso... MMmmmmmmmm
 
I took a combination of all the recipes in this thread for Queso Saturday.

2 lb block Velveeta
1 can cream of mushroom soup
Owens breakfast sausage, browned and crumbled
1 small can, chopped and drained green chiles
1 small can, serrano salsa
half-and-half

On low heat on the crock pot, stirring occasionally. Added half-and-half a little bit at a time at the end to reach desired consistency.

Torn, how was it? I made some as well. Velveeta, rotel (drained), breakfast sausage, and I threw some guac in there after it was done cooking. I meant to put in some black beans but forgot.
 
It was good. Our resident tailgate chef sampled it and asked why I don't cook at the tailgate.

Trust me, if I did in fact cook at a tailgate, you would all soon learn why I don't cook at the tailgate.

But I can make queso. Gotta start somewhere.

OK...you're in charge of Baylor. CHEESE, CHEESE and more CHEESE!! We can use communion crackers for dipping, chase is with tiny shots of Welche's grape juice and then have Baptism in the creek.

DON'T USE ROTEL!!!

Go to the produce section of HEB and get the fresh pico de gallo. Much better than the canned stuff!
 
I am surprised at the number of folks who like Velvetta, or the yellow cheeses. My wife recently found HEB's Queso Blanco and we are never turning back. Melts as good as Velveeta, but has better flavor.
