I went into Randall's today and happened on a couple of New York Strip's, damn near 2 inches thick, for $5.99/ lb, down from $13.49/ lb. So I figure it's my destiny, I'm gonna grill tonight. My entire backyard, is still iced over here in Round Rock, and round 2 should be here within the hour, but I'm about to get my grill on.

Same here. I figured I could take advantage of the cold and cold smoke a salmon filet on my WSM. I'm thinking I can maintain around 200F or less without water in the pan.

hell yes it's thick, let's not tell Pronghorn about this!!!

About the time I started the fire the sleet started coming down like crazy. I don't give a ****, I'm gonna make this work. Given the thickness of these steaks, I think I'll try to sear them on a skillet, and then finish them on the grill. I've never tried this before, so we'll so how it goes.

I'll provide updates with pics.

I grilled up a bunch of ribeyes last night. I was afraid my grill wouldn't get hot enough, but it almost pegged the thermometer (600 F), which is about as good as it ever does.

We had one no-show and one uninterested kid for dinner, so tonight, it's ribeye chili. My house smells incredible right now.

Well they came out great, I couldn't post right away, because about the time dinner was ready, it was F'n Jack Bauer time. I seared them for 30 seconds a side on a very hot skillet, then moved them to the grill over some pretty hot coals for 3 minutes a side. They came out a perfect rare-medium rare and kicked ***!!!

Here's the grill before I got the fire going, and it started sleeting again -

And the finished product. This bad boy was 1.08 lb. uncooked -

My Weber saved the day last night. We lost power out here in SW Austin around 6:30 just about the time we were going to heat up some of the King Ranch Chicken casserole and pinto beans we made up over the weekend in anticipation of the "great ice storm of '07." It's an all electric house, and we were hungry, so what to do?

I went out into the sleet with a flashlight and a couple of wads of newspaper for the charcoal chimney and fired up the Weber. Mrs. Tull put the leftovers into aluminum pans and in a very short period of time we had a piping hot dinner. I felt sort of foolish out there in the pitch darkness and the sleet, so I'm glad to hear I wasn't the only one.
