I Just Got a Charcoal Grill and I need Help!

I'm not familiar with D'artagin in particular, but I'm familiar with farm raised ducks. Part of what makes them very tasty is the thick layer of fat they carry. Once it catches on fire on a grill - Look out! They can be fantastic in an oven.
