This is my burger.
2 lb ground sirloin
2 large eggs
1/4 cup, plus a splash, of tomato juice
1/2 Tablespoon kosher salt
1/2 teaspoon fresh ground pepper
Mix it all up in a bowl-- but you knew that already. Separate mix into three equal parts and form into patties--gently.
3 big buns
1 Tablespoon warmed butter
Yellow onion
1/2" thick slices of tomato
lettuce
cheese, if you like
condiments of your choice
Put a little butter on the cut sides of the buns and brown them under the broiler.
With the preheated broiler 6" from the rack broil the burgers about 4 minutes per side. (For medium rare.) Top with an onion, good tomato, and some lettuce. Your condiment of choice. Blue cheese is good, so is Colby.
I can just about guarantee this will be as good a standard burger as you have had. The tomato juice seems to be the secret. The meat is really a little too wet to cook on a grill.
