Fish Tacos

I made fish tacos from a wahoo I caught about a year and a half ago. Diced it up into fairly small bits, dredged in milk/egg wash, then a mix pf Progresso bread crumbs and some basic fish fry I got at HEB (no clue what brand). I used peanut oil and fried it. Turned out pretty badass. Just used lime and finely shredded cabbage on corn tortillas.

Wahoo's does have great tacos. Had 3 shrimp tacos today. Their black beans and white rice are the ****. Their fish tacos are good too, I just like the shrimp ones better.
 
I've only had Wahoos at a catered party and didn't find them to be anything to write home about. Maybe I need to get them fresh from the restaurant?
 
1) I prefer the "Baja" style of fish tacos. Deep fried white fish (of some kind), shredded cabbage, some kind of chipotle like Dead Head Horn suggested and a squeeze of lime. I know it's not healthy, but damn I could eat 2-3 of those (along with a Pacifico or two) after every surf session.

2) I think the perfect side to 2 fish tacos is a 3rd fish taco.

oh, I did put my slaw recipe in my first post on this thread for some reason. should have posted it after the request.

again, I would like to reiterate using the seasoned crushed corn tortilla chip crumbs. makes frying very easy and very crispy.

also, please use corn oil fro fish tacos...the flavor is a big plus.

EDIT: I just realized that in my recipe, i didn't mention two key things.

1. it's GROUND celery seed that is used. not whole.

2. Mix all of the dressing ingredients separate from the cabbage/onions/etc. That way, it's easier to get incorporated. also you can simply mix, taste, re-add ingredients until it tastes good to you.

oh, third thing...not sure if i forgot or not in the earlier post, but a LOT of fresh squeezed lemon/lime juice is critical.
