What are the best places to buy uncooked meat in Dallas, weighing cost and quality?

Best for Filet/Beef Tenderloin?

Best for NY Strips/Ribeyes?

Best for Brisket?

Best for Ribs (Spare and Baby-backs)?

For example, Central Market has great filet, but their prices are very high.
 
Rudolph's Meat Market in Deep Ellum is very good. Bought some dry aged US Prime ribeyes there for grilling at home. Beef was just as good as the III Forks / Del Frisco quality beef. It is 1/2 block away from the Mozzerrella Company where you can get some great cheese. enjoy

I will second Rudolphs for steaks. Kuby's in Snider Plaza also has good meat, a little cheaper than Whole Foods or Central Market.

I frequent Rex's Seafood at Lovers & Inwood for fish.

For brisket I don't find that you need to do anything fancier than whatever they have at Tom Thumb/Albertsons/any other grocery. Same goes for ribs, but i never cook baby-backs, just spare ribs.

Costco. I used to buy all my meat at Kubys, then moved to Central Market when they came to town, then switched to Costco after reading about their quality meats right here on Hornfans. The quality of meat is outstanding and it's about half the price of Central Market or Whole Foods. Granted you're not going to be able to buy just one steak, but it's a tremendous value for the quality.
 
All good recs above. I have had some decent ribeyes from Sam's Club- haven't tried Costco- but have heard good things.

Have had real good luck w/ brisket and ribs from Super Wal-Mart- brisket is usually $1.20 - $1.50/ lb everyday - not fancy, but brisket is a cheap cut anyway. Pork ribs are Tyson shrinkwrapped- usually ~$10 for a big 'ol slab. Can't find these prices at Kroger/ Tom Thumb- except on sale dates.
 
If you're looking for the best meat possible, you ought not to weigh price. That said, I've been happy with everything I've bought from Kuby's. It's near my house, so I've rarely ventured further and can't comment on most other place on this thread. For ribs, I've been happy with those from Sam's mostly because they're a little cheaper than you can get elsewhere and ribs are ribs. Grocery store brisket is as good as you need.
 
used to live in plano, and costco was by far the best meat i could find within a 15 mile radius. costco's meat is select grade, whereas HEB/randall's usualy sells choice. choice < select < prime.
 
also, costco's suppliers are under contract that if they can't supply that grade at the top of the scale, they have to deliver prime for the same price. so if you see anything labelled prime, there's a good chance much else is as well
