Cooking a steak?

the new brenners in houston served me one of the best steaks i have ever had recently. filet served black and blue. serious badass preperation. i highly recommend.
 
So, we are suppose to use Canola oil, not Olive oil because it has a higher cooking temperature?

I don't care much for butter on my steak but I do like to make a sauce from the drippings using red wine.
