Cooking a steak?

the new brenners in houston served me one of the best steaks i have ever had recently. filet served black and blue. serious badass preperation. i highly recommend.
 
Yes to clarified butter, but margarine is also good...that's how the Hoffbrau does (did?) their steaks.
 
So, we are suppose to use Canola oil, not Olive oil because it has a higher cooking temperature?

I don't care much for butter on my steak but I do like to make a sauce from the drippings using red wine.
