Buying a smoker

It goes to show, you never know...

Although my birthday is tomorrow, I will resist the Big Green Egg temptation. Not allowed to not have birthday gift wishes, I have requested replacements for my electric pepper mill and my ailing olive oil mister. If things go like they usually do, I will not have those fairly modest requests answered.
 
I have the WSM. It is a great cooker and the site mentioned above is a nice resource to quickly learn how to cook decent bbq. I like the fact that you can set the cooker to run all night with no attention without purchasing any additional electronic gadgetry.

Additionally, I occasionally watch the bbq cook-offs on the food channel and you would be surprised how many of those cooks use the WSM.

I am a fan of buying meat from a local butcher. There is a place in Dallas on Elm (or somewhere within a couple blocks) that sells outstanding meat. In Austin, I like The Meat Shop. I believe that the quality of meat you use in the smoker has a large role in the quality of the finished product.

Finally, I think a green grill just looks gay.
 
Amazing. I was just wondering where to go for help and never thought about asking....

I am thinking about a LyfeTyme as I've heard great things about them and my father-in-law has one. I saw only one mention of it. Also, I was only planning to get the offset firebox models, and never considered the water models. What do those that seem to know much more than I think? It seems everyone is high on the WSM, but it does look like I could cook much on it. I will only be using it occasionally.

Also, is there a good place to get mesquite in Austin (besides cutting it down yourself)? THanks.
 
I like the ribeye, but there is just so must wasted. I actually bought the loin roll and cut it myself. I can't remember exactly, but it was under $6.00 a pound.
