What do you put in them?

I put eggs, green peppers, onions, breakfast sausage, and salsa. I need to mix things up and would love for some recommendations.
 
Ya, if I'm putting sausage in it, I like to cook the sausage then grill the onions in the juice.

I switch between sausage or bacon with onion, egg, and cheese. Throw a little Pace on it and you are good to go.

Although, I am looking at putting some potatos in it, but I can never find the right kind.

Regarding the Potatoes....how do ya'll do them? The one thing I feel I've struggled with is making good potatoes for breakfast tacos. Any advice?

Otherwise, I'm doing sauteing onions/peppers and throwing some scrambled eggs in and mixing it up. Then Bacon and cheddar cheese, salsa, maybe some guac or sourcream.
 
for the spuds, I always make mine with cooked potatoes. Usually I bake the taters, let them cool and chop up and pan fry with onions, garlic and use peanut oil or I will chop up the spud and cook in water, drain in alot of cold water and let dry, then cook as above - hope this helps you
 
This is my specialty.

3-4 eggs
6-9 Ore-Ida frozen tater tots
1-2 links chorizo
handful shredded cheese
sour cream
salsa verde
tortillas

Put a dollop of oil in a skillet and cook up the tots. Mash the tots until you have hash (you could use hash, but I have a kid who likes tots). Put the tots in a strainer off to the side and cook up your chorizo. When the chorizo is cooked to your liking (I don;t like it too browned), add the tots back in, mix and add the eggs over the top. Mix while cooking and add the cheese right before the eggs are done. Sour cream and salsa verde go best w/ these tacos.
 
Machacado a la mexicana on a homemade tortilla de harina made by some abuelita in South Texas. Machacado, if you don't know; is made using carne seca, a kind of dried, shredded meat that is cooked up in a skillet with egg, serranos, tomato, onions, and green pepper.

As for potatoes, the key is the cover. If you like crisp potatoes, don't use a lid. If you like them soft, cover them while frying on medium. Personally, I fry them without a lid until the edges start to brown, then I lower the heat and cover them. When they break with a crumbly edge, not a clean break, they are ready. Salt and pepper is enough.
 
A quick and easy way to add potato to your tacos.....

I stick a couple of Yukon Golds in the microwave until fork tender. Cool slightly and then peel. (You got to have tough hands to peel them because they will still be pretty hot).
Cut into chunks, usually 1/2" x 1/2". Put into a bowl and add some butter, salt, pepper amd a little paprika. Mix gently and add to your taco.
You can do all of this in about 10 to 12 minutes.
 
Last time we went out shooting guns and drinking beer, Pescado Rojo cooked up breakfast tacos -- they were pretty damned good.

Fried strips of bacon. When done, browned diced onion and sliced fresh jalapeno in the bacon grease. When browned, added the eggs to the skillet. When all that was done, a little sharp cheddar and a slice of bacon to top the mixture on each of the warm tortillas, with a little fresh salsa.

I am also partial to chorizo con huevo.

Machacado is an AWESOME taco, for those of you who haven't tried it.

And it's hard to beat a good potato egg and cheese sometimes, with a dash of salt and a good fresh salsa with lots of onions.
 
This is my recipe for Breakfast Tacos.

2 medium potatoes
2 Tbl spoons olive oil (more or less I don't measure)
1 small onion.
1 lb breakfast sausage
6 eggs
shredded cheese

Peel and cube potatoes to about 3/8" cubes
Add olive oil to skillet and heat to medium.
Add cubed potatoes and cook in olive oil to about half done(not fully cooked potatoes). I also use fiesta fajita seasoning to taste on the potatoes.
Add sausasage to the potatoes and continue to cook.
Cut up onion and add to skillet. you can also add peppers of you choosing at this time.
Continue cooking until sausage is fully cooked.
While sausage is cooking prepare the eggs for scrambling.
When sausage is finished add the egg mixture to the skillet and cook until eggs are done.
Once eggs are done remove from heat and cover the top with shredded cheese and wait 5 minutes to serve to allow cheses to melt.

I have found that the potatoes will not be crispy if I add the sausage to them this way but they will be soft and cooked throughout. If you cube your potatoes larger it may take longer to cook and they may become crispier. I also season the potatoes and eggs before adding it to the sausage. The potatoes will absorb some of the salt in the sausage and the tacos may be a little bland.
