Winter Stew

This is greatness on a cold winter night, and cheap also.

Brown 1 lb ground beef, with 1/4-1/2 cups of onion.

After it is browned, add the following:

2 cans of pinto beans
1 can of red kidney beans
1 can of corn, the kind w no sugar added
1 can of rotel
1 can of stewed tomatoes
1 package of ranch seasoning
1 package of taco seasoning

Put on medium heat until boiled, and then simmer for 15 minutes.

I add shredded cheddar cheese and jalapenos to mine.

You can change it up a bit and will still be good, I added some hatch green chiles tonight since my wife bought the wimp mild brand of rotel.

No draining involved, just put everything in a stewpot and let it go after meat and onion is done.

Sounds great save the kidney beans. I am a huge bean fan but have never been able to cultivate any love for the kidney bean.
 
That looks good. I would add some cilantro and a touch of sour cream to mine.

I am a big fan of Ox Tail stew with root vegetables on a cold winter day. Maybe I'll break out the old recipe and post it here.
 
I just made a beef stew, and it turned out pretty good. Would appreciate any other recipes, or additions to my recipe that would add to the greatness of this simple cold weather favorite.

I used two pounds of chuck roast cut into one-inch cubes. Browned the cubes in butter, added some pepper at that time.

Transferred the meat to the stock pot, added about four cups water, one-half bottle of dark beer (Shiner black lager), one can of chopped tomatoes, one large onion cut into chunks, one clove garlic, one TBS sea salt, one TSP black pepper, one TBS chili powder, one TBS worchestershire sauce, one TSP cumin. Simmered for one and one-half hours, then added the vegetables-three potatoes, peeled and cut into chunks, about four carrots, several stalks of celery sliced every 3/8 inch or so, one more onion cut into about 1/2 inch pieces. Simmered for 30-45 minutes. Cooled down, reheated later (better after a reheating for some reason).

Tasted good, but a little mild for me (FIL was visiting, didn't want anything too spicy). Made some home-made bread with the bread machine-good winter meal.

Any suggestions or other recipes for this dish?
 
What is a can of stewed tomatoes? Is that near the tomato paste?

And what is ranch seasoning? I am guessing that is near the taco seasoning but never seen it.

I am going to make some carne guisada from the HF recipe next week but should try the stew too.
 
Call it what you will, it's damned tasty.

I cooked this up using 3 cans of jalapeno pinto beans instead of the been mixture in DallasHorn's recipe (don't like kidney beans and thought I'd combine the beans/japs step so it wasn't too hot for the wife). Added some shredded cheddar and cilantro right before serving and it was delicious.
