Wine and Cheese Pairing

I am going to a wine and cheese soiree on Friday evening at a friends home and we are all to bring a wine and cheese pairing...any favorites or suggestions?

I hope I'm remembering this right. I had some cheese from Cowgirl Creamery, don't know the name but it's the one wrapped in nettles, with some Pinot Grigio. That worked really well.

You know, I haven't really been able to get into brie - I tend to lean towards semi--hard cheese....and of course, it's all about me.

For summer a dry, crisp Prosecco, look for one that says "Brut" on the label, goes GREAT with any goat cheese or a bleu or roquefort for that matter.

Prosecco is a great palate cleanser too, as are most sparkling wines, and can really help cut the inevitable "coat-tongue" you get after 30 mins or so at one of those things.

If you like the consistency of Brie but want something less pungent, there is an incredibly rich triple cream called Saint Andre. You can find it at Central Market, Whole Foods and some larger grocery stores. Pair it with a dry Cab.

Three classic cheese and wine pairings:

Roquefort and Sauternes
Stilton and Port
Chevre and Pouilly Fume or other quality Sauvignon Blancs

Camembert and Cabernet is my fav. Not wine related, but roquefort and green apples is probably my favorite food combination of all time.
