(wince) steak with no flame

Cardinal sin? sure. however, living in an apartment/townhouse with no grill leaves my options limited. What is the best way to cook a steak in my situation? I never seem to get it right when i try and broil it in the oven, and the girl can't handle eating anything over medium-rare. I feel like my steaks go from bloody to medium-well in an instant. this is a MAJOR hole in my culinary skill set.

While it's definitely not flame grilled, the George Foreman grill my parents got for my apartment grills steaks just about as well as you can without a flame. It cooks the top and bottom evenly, and is capable of putting out some juicy steaks, like the one I just had for lunch (cooked the night before). You can definitely tell, though, that it was not flame grilled.

As far as using a stove/broiler go, I've never tried steak that way, so I wouldn't know where to help.

Many of the great restaurants of the world don't use flame to cook their steaks

Sear in a hot skillet/pan. Place in hot oven for short period of time to desired internal temp

Or just sear it good if you like it medium rare, like most.

Don't be a coward. Cast iron. Sear it on both sides, then broil it for a few minutes. Honestly, flame doesn't mean **** when you have a good cut.

A filet seared in a cast iron pan and finished in the oven is just as good, if not better, than one done over a flame, and the way many restaurants cook their steaks. For bonus points, use clarified butter like the resaturants do.

no wood? no flames? no smoke?

Fanny - I have to agree that a nice cut of meat should stand on its own. The rest is a matter of preference. I like a little smoke on mine.

What Alton didn't tell you is, have a big-*** vent fan and open all the windows, or you will set off the smoke alarm and stink up your closet.

It's worth it, though...

I suggest the cast iron skillet as well. I have a cast iron grill skillet, so you get those grill markings as well. Sear in hot skillet finish off in the oven (skip that for medium rare or under). Heed the proper ventilation advice.
