Will bacon fat go bad?

Just cruising around here.
particularly since I have to cook a roast when I get home.
Similar situation; the roast has been hiding in the freezer all summer, and I'll brown it with the bacon fat stored in the fridge... maybe -

I rendered the bacon at least a year ago, maybe longer- ran it through cheesecloth, then poured it a jar, then to fridge.
See, I forgot about it (shame)... last time I made a rouge, I even bought fresh bacon, for the fat.

does it go bad, even in the fridge? If how do you tell? Smell, I guess
 
Growin up, my mom didn't even bother refrigerating bacon fat and it would last forever.

I've just got a jar of it in the fridge that I add to when I cook bacon. I'm still living.
 
I keep bacon fat in the fridge indefinately. I also don't understand why you strained it through a cheesecloth. I generally like to see some of those very small gritty bits in the food I am using my stored fat on. I just add to the fat each time I fry up some bacon. I haven't heard of it going bad, and I have never tasted it being off at all. Maybe I have been poisioning myself and just don't know it.

What were your cholesterol levels the last times you had them checked?

Napoleon, the last time I had my cholestoral checked both types were very low. In fact, they wanted me to raise my good cholestoral, but my 'bad' cholestoral was very low. I want to say total was like 120
 
Thank you Napoleon. I do in fact feel lucky. Also remember this. When I cook up green beans I'm putting about a tablespoon of bacon fat into a pot. That has no more fat than putting a tablespoon of butter into the beans. They are pretty close in fat make up, but not in taste make up. I do believe that something like that is where you get a great deal of taste for not that much fat. So you are eating maybe .5 teaspoon of bacon fat per serving. and you are eating it with green beans. Not that unhealthy.
 
Back to the OP, I've never had it go bad keeping it in the fridge but I have leaving it setting on the counter. It'll develop a rank/sour smell to it when it turns.
 
homer, bacon fat isn't necessarily higher than other other animal fat product such as butter... I'm not going to say that bacon fat is particularly good for you, but if you are throwing a small amount in veggies this is far less fat than eating something like mac & cheese or even a single piece of cooked bacon.
