Wild Turkey recipe?

Make that wild turkey, not Wild Turkey.

My son just shot his first wild turkey. I rarely hunt turkey (I don't know why given how fun it is), so it's been a long time for us. I think the last time we used a recipe out of an L.L.Bean cookbook that didn't turn out so great. OTOH, our store bought turkeys don't turn out that great, either.

Any suggestions? We **** this up, and we'll have to wait until Fall to try again.
 
I limited out in one day this spring - just to brag. Anyway, what I normally do with the breast meat is cut it up into strips- like chicken strips. Then soak them in buttermilk for at least 3 or 4 hours before cooking. Then I make an egg wash with milk, eggs, and some bbq sauce. You can leave the sauce out, but it gives a little twang that I like. Then bread the strips. I use Zatarain's fish fry, it tastes best for me. Then fry those puppies up in a deep fryer (I got a grandpappy for like 30 bucks - so easy). They cook pretty quick, so watch out. When they float and turn golden brown they are done. Ohhh they are good. Get some fried okra, onion rings...I think I know what I'm having tomorrow.

Another thing I do with the breast meat is make fajitas. Cut the breast up into pieces like you want,I get some fajita sauce, a little buttermilk (I always use a little buttermilk with game - it takes down the gamey flavor a little) and some TexJoy Fajita seasoning. Let it sit for a few hours. Then either grill it, or cook it on the stove. I live in an apt. so I have to use the stove. The only thing about this is to not cook them too hot, because they dry out really really easy.

If you kept the legs you can try to bbq them next time you bbq anything else, but I don't know how that will go. My dad has done it twice, once they were amazing, and the second time they were horrible. He was cooking brisket both times and just used the same rub. I know an old coonass who uses the leg meat pulled from the bone in gumbo, but I don't know how he cooks it before hand.
 
Those sound good, BW. Thanks. Mrs.IMWP would like the fajitas, but getting her to try to deep fried option would take some coaxing. The kids would like it, though, so we have her outnumbered.
 
If you only have the one chance I'd definitely fry them b/c the fajitas cook really different than a lot of meats. The wild turkey breast is so lean that it takes a little tinkering with before I learned how to cook it right. Frying is just frying. And it tastes amazing.
