where to buy St. Louis ribs?

What?

Do you mean spare ribs? Because that's what "St Louis Style Ribs" are at barbecue places.

H-E-B, Costco, etc. has spareribs.
 
And hornian has an excellent pork spare rib preparation thread as well...

Pick the rack of spareribs that you want. Take them to the butcher. Tell him to cut off the top strip to make them "St Louis Style." He will do it. You will have trimmed ribs, and a nice strip to smoke along with them that makes for tasty snacking.
 
This is a confusing thread to me. What are St. Louis ribs? Do you eat a St. Louis?

Now I am biased towards beef ribs, which I believe is fairly well noted on hornfans. As is the fact that corn tortillas are the ONLY tortillas, and gumbo is okra. But I disgress.

I guess I am with the other posters here. St. Louis ribs are just the preperation. It isn't hard to find pork ribs just about anywhere.
 
St. Louis ribs are pork spare ribs but trimmed a certain way. That's it.

I do trim the membrane and the flap off the pork spare ribs but that's it. To convert spare ribs to St. Louis ribs, you need to do that and more.
