What would you do with a rib roast?

I'm trying to do some research. I have a 6lb. rib roast that I want to cook. I've thought about traditional methods (salt covered/roasted/horseradish/au jus), and I've thought about smoking it. There might be some great way of cooking it that I have never heard of. If so, let me in on your secret.
 
Our local Brookshire's has them for 4.99/lb. How do they freeze/thaw out? If it does well, I will go buy some more. I have three freezers, and nothing will be butchered for 6 months.
 
Shouldn't be any problem in the freezer. I've done it a couple times and thawed it in the fridge a couple days and then let it come to room temp before cooking.
