My kids asked me what my favorites were when I was their age (they are 6 & 8). For the life of me I remember more of things I did not liked vs. what I liked.
I remember sloppy joes and tater tots being something I enjoyed...what are some of the dishes you liked as a kid?
Potatoes, Ground Beef and Chili with butter and flour tortillas
Blue Corn Enchiladas
Chicharron Burrito (Christmas with the chili)
Shepherd's Pie
Sloppy Joe's
Posole
Grandma's biscuits and gravy
Peanut Butter and Jelly mixed in a bowl and eaten as is or maybe on bread.
Frozen orange juice from a can. I know but hey, I was a kid.
Pizza
Steak and Eggs. Tons of A-1 on the steak since it was really a hamburger patty, oodles of cheese on the soft scrambled eggs with hash browns you cannot see because of the cheese on them too.
Taquito's
Pollo Asado y al Carbon. Man I loved that chicken and still do to this day.
Oh, tamales. I loved football Sundays because that meant a ton of food with family. All the tamales you could eat as long as you got the dad's and uncles beers. Taquito's, enchiladas, all the above was in plentiful proportions. An orgy of Tex-Mex and New Mexican food. So many left overs coming home and ending up in my lunch box. The gringo's had bologna samiches. I had mexican food.
Wolf Brand chili, kidney beans and cheese over minute rice
cantaloupe with a scoop of vanilla ice cream
Shakey's Pizza
T-bone off the grill
peel and eat shrimp
peanut butter toast
When we were little, my brother, sister, and I drew on paper plates that were later turned into plastic dinner plates. Since I was the youngest, my drawing was crap, but it had my name on it.
If you did not include mac n cheese on your list, you are either a liar, a commie, or both.
Of course, at 4 years old, I pitched a temper tantrum in the grocery store because my mom told me that she would not make stuffed artichokes that night. I loved me some stuffed artichokes. Still do.
My mom made this badass open-faced hamburgers that I still crave now and then. You season up the ground meat like for meat loaf, but then spread it on each side of the bun, smear a little butter on it, and put it under the broiler until it's done. I could eat 6 of them at a sitting....
- Fried Bologna Sandwiches
- Wolf Brand Chili and Amercian cheese over spachetti noodles
- SPAM
- My mom's Chicken Noodle Soup
- Spaghettios....right out of the can!
My Mom's fried chicken. This was back in the day when you had to buy the chicken whole or it came from my Grandmother's house raised in her coop. They were scrawnier looking, but sure tasted a lot better than the plump genetic mutants we eat now.
My Mom would cut it up so that the "pully bone" (wishbone) remained intact in order to make an extra piece of white meat for us kids. Not only that, but afterwards, a competition with my Brother pulling the bone apart with the winner reaping the good luck. (Plus, that 3rd grade show-and-tell science project turning the wishbone to rubber by soaking it in vinegar.)
Always seasoned and floured in a brown paper bag and cooked in an iron skillet with Crisco, she had a couple of other variations that we all loved. One being garlic flavored and the other soaked in buttermilk beforehand. Man, what I'd give to have a plate of that with mashed potatos, cream gravy, white bread and a glass of milk right now.
Other childhood faves included mac & cheese from scratch, fried okra from the garden, Underwood's deviled ham sandwiches, sloppy joes, canned ravioli, Grandmothers pickled beets, corny dogs with tater tots and homemade ice cream. (As a little kid, my Dad or Uncle would have me sit on top of the freezer to make it easier to hold down while they hand-cranked it.)
