What to do with leftover New Year's ham

give it to panhandlers. could help with the population.
 
Chop the meat up, bag it into several appropriate portions to freeze in sandwich/snack bags.

Then thaw/saute them out later for use in breakfast tacos or salads....whatever.
 
Chop the ham into sticks (julienne). Saute chopped onion and garlic in a small amount of olive oil and butter. Add the ham and some frozen (or fresh) green peas, and asparagus if you wish. Then add in a half-cup of heavy cream (or milk if you prefer but it's not as good), a pinch of basil, a pinch of nutmeg and let reduce. Toss with the pasta of your choice, salt and pepper to taste and top with lots of fresh parmesan.

I make this frequently because it's easy. Plus the asparagus and the ham make your pee smell like...

I threw half of it in the freezer so I could make a pot of beans. Probably this Sunday.

I also have a pumpkin pie that I still need to make.
