I can think of several things.... lamb chops are always a good choice.
Just my thinking right now, but fajita or chile lime chicken sounds good right now. If you do something like that let me suggest a wonderful side that goes with that. It can be used as a salsa with chips or under or over grilled chicken.
1 can whole kernal corn (Drained)
1 can black beans (Drained)
1 can diced tomatoes (drained)
1/4 purple onion diced
fresh cilantro to taste
garlic salt, chili powder and cummin to taste as well.
This stuff is great. I know there are several similar recipes our there. I generally cook off the top of my head, so just use that recipe as a guide.
get good size veal rib chops at least an inch thick
slice open and stuff with roasted red peppers (canned is ok), fresh basil and fontina cheese (or boursin works well too). salt, pepper and EVOO on the outside and throw on the grill. grill medium rare.
serve with brussel sprouts chopped and sauteed in red wine vinegar and garlic.
I've got a new one for ya: Grilled Salmon with mango chipotle sauce/marinade. I've cooked out everything from vegetales to ribeyes to lobster, but I just tried this on a whim tonight and it is AWESOME.
Go to a grocery store with a good seafood selection and get some Salmon steaks. You'll probably find Atlantic salmon, make sure they're fresh and about 3/4" to 1" thick.
Take'em home and don't freeze'em. Start your charcoal grill (or, if you have gas, just wait till you're ready).
Soak'em in A1 Mango Chipotle marinade for seafood for about an hour. (Also, if you're doing sides i.e. baked potatoe, etc, you cood these once your grill gets to 350-400 F. while the salmon is soaking)
Stick the salmon steaks on the grill and pour some of the excess marinade on top and let it cook in. Save some for when you flip the steaks which you will do in about 6 minutes.
Personally, I like these seared a little bit so I get part of the grill hot and part of it flaming hot so I alternate to taste. There will be small bones close to the center of the steak but if the cut is good it shouldn't be a problem.
Save some of the marinade for sauce to top the steaks when you pull'em off. It makes a great sauce as well.
This is different from what I usually cook out but it is great.

wow, the grilled salmon sounds really good. i will definately have to try that sometime this season.
since i am a little pressed for time, i decided to just grill some chicken legs and wings. i have the legs marinating right now and i am ******* pumped to get started grilling them tomorrow night. picked up a 30 pack as well.
