What can I do with all this stuff?

My mother-in-law (a recent vegan convert) stayed with us for the weekend and left a multitude of fruits and vegetables in her wake. Even if my wife and I ate nothing but veggies for the next few days, there's no way we could finish all this before it went bad. Here's what we're looking at:

8-10 red chili peppers
6-8 yellow squash
12-15 pickling cucumbers (a couple days past their prime)
5-6 large red tomatoes (also past their prime)
several ears of corn
bell peppers (red, yellow and green)
2 cartons of sprouts
2 cartons of baby spinach
1 large carton grape tomatoes
8-10 baby eggplant
several onions of different colors
4 lemons
1 avocado
1 pomegranate (WHY!?

1 bag shredded broccoli, cauliflower, cabbage and carrots (slaw mix)

We always eat a lot of produce in our house, but this is a little ridiculous. Really, I don't know what she was thinking. Most of this stuff we didn't even touch. Plus, she gave us a packet of seeds for edible flowers. They've been planted on our patio and should be ready in a few weeks, so I got that going me.

I'm thinking I might take the peppers, onions, tomatoes (and maybe the corn and eggplant) and make some sort of relish or salsa for canning (I do have canning jars). But I don't really have a good recipe in mind.

The cucumbers piss me off cause they're about to go bad, so I don't think I can pickle them and I'll probably just toss em. Also, F the sprouts. I'll let my wife worry about those things.

So, I turn to the collective wisdom of HornFans. How can I make the best of this bounty/misfortune? What say you?
 
my initial thought is to make a vegetable soup out of all those veggies. I don't know if you could use all of them, but most of them would work well together. I would get or make some good beef or chicken stock and simmer veggies for a long while. You could always use veggie stock if you want to make it vegan. You can then always freeze the left over quantities of soup for later consumption. Fall and winter wil be here soon enough that you could just pop out some soup and heat it up before it would get freezer burned or anything...
 
Take the corn, chiles, bell peppers, and onions and make corn chowder.
One of my favorite Winter soups. It freezes well.
 
The corn chowder sounds like a really good idea. I even have some leftover brats sitting around that would go great in that.

As an aside, I discovered I am also now the proud owner of a carton of oat milk, a carton of hazelnut milk and a jar of pomegranate juice. I think oat milk and hazelnut milk will actually make killer white russians. Any other ideas?
