Venison?

Over Christmas, my stepdad gave me 10-15 lbs of cubed venison to take home with me. I've only cooked the tenderloin before...

What is the best way to cook this? Flatten it and use flour a la chicken fried steak? Can I take it to a processor and get sausage made, or is this too small of an amount?
 
Carne Guisada. Use the recipe on the back of the Bolner's mix you get at HEB except add some sauteed onions and bell peppers and double or triple the amount of mix they say to add.
 
If you're wanting dried sausage -- like for a snack with cheese and crackers -- there is NO PLACE BETTER than taking it to Hudson's Meats on South Congress. I've been taking my deer there for years and they're absolutely spectactular to deal with.
 
Can you take an amount of venison like 10-15 lbs to have it processed into either summer sausage or links? I've only ever taken an entire deer to the processor.
 
You probably won't get "your" meat back, but there is probably not any minimum amount. 10-15 pounds of cubed venison is well more than 2 shoulders and that is a typical way to deal with shoulders - make it into sausage. I bet they won't bat an eye.
