We seem to talk about meat and combination dishes (meal type things like pasta and sauces). How about some veggie talk.
I have 2 to offer that are greatness.

1) sauteed spinach. Fresh leaf spinach, just melt some bacon drippings, add a bit of salt, lemon pepper, and then throw the spinach on and cook. GREATNESS.

2) asparagas. Ok, I admit this is about as pure as it gets. A little bit of water in a pyrex pan, throw in asparagas lightly salted. Cover loosely with saran, and microwave. Serve. Simple as that, just lightly salted steamed goodness.
 
generic stir fry bok choy recipe:

Ingredients:
4 bunches baby bok choy (basically, 1 bunch per person)
2 cloves diced garlic
2 slices ginger
2 tablespoons soy sauce
1/4 teaspoon salt, or to taste
1/4 cup water
cornstarch slurry for sauce (optional, if you want a thick sauce)


Preparation:
Wash the baby bok choy and drain. Separate the stalks and leaves. Cut the stalk diagonally and cut the leaves across.
Heat wok/skillet and add oil. When oil is ready, add ginger, garlic and stir-fry briefly, for about 30 seconds, until the ginger is aromatic. Add the bok choy, adding the stalks first, and then the leaves. Stir in the soy sauce, and salt, and stir-fry on high heat for 1 mdinute.

Add the water, cover the wok/skillet and simmer for about 2 minutes...then add in cornstarch slurry.

It's also pretty tasty to add some shitaki mushrooms as well.
 
I love fresh vegetables but i love sauteed asparagus and greenbeans.

Below is a simple recipe:

Parcook asparagus or greenbeans either by using the steaming or boiling water method (which ever one you prefer).

Remove veggies, shock them in cold water, and drain.

In hot pan, add butter, olive oil, and freshly chopped garlic. Toss the veggies in and saute for a few mins.

It's really yummy!
 
Couple easy/tasty things.

1) sauteed tomatoes with cheese. Slice up 3-4 tomatoes, and through them in a pan with some warm evoo, and add some salt, pepper and oregano. It'll take ~20 minutes to get them to a good consistency. Dump half a block/a full block of your favorite cheese (extra sharp cheddar for me), turn off the burner and cover for a couple of minutes to melt. Really tasty.

2) Easy tasty asparagus. In a bowl, put together some evoo, salt, pepper, diced cloves of garlic (2ish), and some grated parmesean cheese (2ish tlbsp). Put the mixture on the asparagus and roast for 10 minutes at 350.
 
1. Skewer asparagus on two metal skewers, so that they are like a rail road track. Spray with olive oil, salt and pepper, and then onto the grill.
2. Russian Salad: Cut up the freshest tomatos and cucumbers you can find. If you like red onion, add some of that as well. Add some olive oil, salt, pepper, and whatever else spice you feel like that evening. Toss and enjoy.

I am of the generation that my mother always overcooked the vegetables, and as a consequence, I learned to hate them. Now that I get to cook my veggies, if they are even cooked at all, they are always fresh and crispy.
 
Olive oil, garlic, pepper-- fresh or frozen green beans left long
skillet hot-- 10 minutes stir often

yellow squash-- cubed into 1/4 inch cubes-- a little butter, fresh onion--sautee onions 3 minutes,,,, add squash--stir on high---remove when they start to look tender-- don't over cook
 
Here is a real simple squash recipe. You may use either yellow or zucchini.

Saute some onion and garlic in oil, olive oil or butter
Add squash that has been cut up.
Add either diced fresh tomatoes or 1 or 2 cans undrained tomatoes that have been diced.
Salt and pepper.
Add spices:
For an italian flavor add italian spices (parsley, basil, oregano)
For a cajun flavor add cajun seasoning
For a tex-mex flavor add chili powder, cumin
Saute squash 10-15 min

Another option: instead of cooking for 10-15 min, pour into a casserole dish, top with cheese and bake at 350 for about 25-30 min.
