Vegas on New Year's Eve

I am planning on going to Vegas with my girlfriend for New Year's Eve which also happens to be her birthday. Her 21st birthday in fact. I have been to Vegas once before, but I am still fairly clueless. I am looking for any and all recommendations you can throw at me. Places to eat, bars to attend, shows to see, things to avoid, etc. especially with the New Year's context in mind.

I am on a moderate budget, but I really just want her to have a good time. Obviously I have been doing quite a bit of research, but there is no substitute for the personal experiences of others. I realize that there are a million Vegas threads already, but hopefully y'all will come through with some New Year's tailored advice.

If you are truly on a moderate budget, I would suggest you pick another town. Vegas is not a fun town(unless you consider hanging out in downtown Vegas fun) on a moderate budget.
 
keep in mind that on New Years Eve most clubs have parties where you'll pay anywhere from $100-$300 and on up per person. This doesn't include drinks (other than a champagne toast). It's not as if you can go club to club.

Hotels will be expensive, especially if you haven't already booked something. You could find something cheaper but don't expect much.

Point is, you'll need some cash in order to enjoy Vegas on New Years
 
Probably all of the big Strip casinos are fully booked for New Years.

Off Strip the Orleans still has rooms, but three nights will cost $460+tax.

New Years is about the most expensive time to go.

Try Casino Royale - great Strip location, but is a dumpy little (150 rooms) motel type joint. North on the Strip are a few really sleazy hooker hotels.

There are a few others like the Stratosphere you can check out.
 
Let me clarify what I mean by moderate budget. I've already looked at flight, hotel, etc. and planned accordingly. I realize that it will be expensive, that's not an issue. I'm just trying to avoid spending $100 per meal and $20 per drink. Again, I know this might not be far off for this time of year. I am looking more for general thoughts on being there over New Year's. Any favorite bars, favorite buffets, best place to gamble, etc.
Hopefully this clarifies a bit.
