Several over on or off Paradise near the Hughes Center - Morton's, DelFrisco's, Gallagher's (I think it closed), Ruth's Chris, etc.

If you are so inclined, plenty in Sumerlin or Henderson.

there is a chinatown area not far from the strip with lots of good choices, sorry i can't remember the name of the place i went to

some of the best restaurants in the world are in the casinos. not sure why the condition you put on selection was put in, but whatever.

Lotus of Siam (I think that is the name) on Sahara for Thai food. Some of the best anywhere.

Kitchy but tasty French restaurant I think on Sahara called Pamplemousse
