Tomatillo sauce

Anyone have a good one? I was just in the mood this week to make some chicken enchiladas.

I looked around online a while back and didn't really come up with a good one. The one I tried just didn't have a lot of flavor, was just really hot. Ended up having to mix in some canned green chili sauce.
 
10 tomatillos
1-2 jalapenos (depends on size and how spicy you want it)
1 avacado
1/2 onion
3-4 cloves garlic
1/2 of a supermarket bunch of cilantro
1 tsp salt
1 tsp sour cream
squirt of lime juice.

I boil the tomatillos abt 5 min. Then everything into the blender. (this is sized to max out my blender)
 
I've never boiled the tomatillos, I've always roasted them on the grill.

Maybe I'll try the boiling thing.
 
Thanks 77, that sounds really good. The avocado and sour cream were missing from my last try and that might make the difference.

Last time I think I put two jalapenos in and it was way too much, couldn't taste the sauce itself. So I may try it with one and see.
 
I just made this using 6 tomatillo's and skipping the cilantro and sour cream. I went with two jalapeno's and wish I had just used one or at least de-seeded them. It is delicious in spite of the heat. I think the avacado makes all the difference.
There's a boston butt in the crock pot with 1 beer, lime juice, red onion, garlic, one thinly sliced jalapeno, chili powder, cumin, salt & pepper.
The tomatillo salsa is going to be awsome on the pulled pork tacos and will be ready at the end of the first quarter.
 
I broil them in the broiler on a cookie sheet so you get all the juice. Works great.

Cant wait to try this version but will go easy on the peppers. Tomatillo is easy to overwhelm.
 
I used it as enchilada sauce, and my one complaint would be that it doesn't really have a sauce texture. It still works but it seems almost more of a dip. I wonder how it would be if you included some cream of mushroom soup or something like that.
