is an art form. Everyone has their own tastes, but I started with a traditional variety:

Bread (butter on outside, mayo on inside) with cheese in the center, grilled to perfection.

I made one last night that contained smoked gouda, aged cheddar and peppered salami... it was epic.

How do you guys like yours?
 
I prefer mine fast.

I'm old fashioned. Just the basics. Bread, butter, and cheddar. Unfortunately in my older days not I have to substitute margarine for butter.

bread, butter and american chz. I likes grilled ham and chz also but I think I could eat the basic everyday and not get sick of them
 
if you put ham or salami or whatever in it, it isn't a grilled cheese.

I like cheddar and swiss. guoda sound good, never had it before.

i've made plenty of 'em with american cheese and margarine.
 
my favorite is plain american, butter and bread, but i like to throw a tomato slice in and a little bit of mayo at the end to mix it up sometimes. i just thought of it as i was typing, but a small bit of sauteed onions might be good when added to that combo
 
bread, margarine, american cheese. this is how my mom made em when i was little, so that's how i still eat em. i've tried making them more exotic (gruyere cheese, for example) but found it unappetizing.

get your favorite bread and slice it up, butter the outside, use a spicy mustard, mayo and horseradish mix for the inside. Add some roasted red peppers, sliced garlic, prosciutto and smoked fontina cheese. Melt to perfection and eat.

Pesto-Crusted Grilled Cheese

Prep: 15 min., Cook: 6 min. per batch.

1/3 cup mayonnaise
2 tablespoons jarred pesto sauce
8 sourdough bread slices
4 (1-oz.) fontina cheese slices*
1 (12-oz.) jar roasted red bell peppers, drained and chopped
4 (1-oz.) Cheddar cheese slices

1. Stir together mayonnaise and pesto sauce. Spread evenly on 1 side of each sourdough bread slice. Place 4 bread slices, pesto sides down, on wax paper.
2. Layer 4 bread slices on wax paper each with 1 fontina cheese slice, bell peppers, and 1 Cheddar cheese slice; top with remaining bread slices, pesto sides up.

3. Cook sandwiches, in batches, on a hot griddle or in a nonstick skillet over medium heat, gently pressing with a spatula, 3 minutes on each side or until golden brown and cheese melts.

*Provolone or mozzarella cheese slices may be substituted.
 
In high school I would make my way to the living room at about 12:00pm for "brunch". That included a double header of NFL games, two sports sections (it was a two paper town back then), and 2 grilled cheese sandwiches (made back to back, not at the same time).RECIPE:
2 slices of bread (prefered white, but in high school it was usually Orowheat)
2 slices of Kraft American cheese
1 Dab of margarine (my parents thought that it was "healthier" than butter)
2 knives of Miracle Whip (like mayo, but with a tangy zip)
1 2-sided grill

DIRECTIONS:
Plug in the grill and turn on. Spread Miracle Whip on one side of each piece of bread. Put both slices of cheese on one side with the Miracle Whip. Cover it with the M.W. side of the other bread. Butter the top side of the sandwich. Butter the bottom grill. Put sandwich on grill with dry side down. Close the top grill over.

When cheese starts gooing out the side, sandwich is ready.

Remove from Grill. Put on plate. Slice diagonally from corner to corner. Then serve on tray with glass of orange juice.

SIDE NOTE:

When my father made these sandwiches for me, everytime he would bring me my sandwich there was a bite taken out of one of the corners
. I guess that was his way of charging me for the effort.

The mayo is not necessary but it is very good with it.

Mine is bread, butter, cheddar cheese, tomato slices, and mayo. For a full meal add a slice of smoked turkey and a slice of ham.

For those watching their fat, you are eating grilled cheese! That little pat of butter is not going add that much fat and it may hurt you less than the hydranated fats made to make margarine. Use olive oil instead of butter if you want to cut out bad fats.

I will say the cheese, butter, mayo, tomato slices, and bacon sandwich sounds super good.
