Tell me what to do with these knives

What is the difference between the chef's knife and the santoku chef's knife? What should each be used to do?

I believe they should both be used for the same thing, slicing and dicing. the air slots or whatever they are called are there to keep the vegetables from sticking to the knife
 
One thing I really like about my santuku is that the rounded tip can be used as a scraper/spatula whilst I cook.
 
Mostly a matter of preference. If you use the rolling technique though, there's a more curvature on the chef's knife, making this easier. The santoku is more of a chopper.
