I just finished a multi-day jury trial in Groesbeck. One afternoon, on our lunch break, while working in the conference room of some friendly local lawyers, one of the locals brought in some Swick's barbecue. This is apparently a little shack in Groesbeck.
We had sausage and brisket. Holy crap. I don't usually pay any attention to what I eat during trial -- it's just fuel to keep me running. A bland ham sammich on white bread is the same as a gourmet meal. But I took a bite of this sausage, and looked away from my witness -- "where'd you get this?" he told me. I told him that it may be the best sauasage I've ever had.
It was a member of the crumbly sausage family, as opposed to the denser german-type sausages. And it had just a hint of a stronger flavor in it -- almost gamey, like it had venison, or goat. It was freaking amazing.
And the brisket was incredibly tender, and had a smokiness that permeated perfectly throughout. Both would make it in my top tier of the respective categories in the state.
I never even went in the door of the place, and Swick's Barbecue in Groesbeck is now on my list of "best bbq places in Texas," along with Cooper's, Meuller's, Kreuz's, Luling City Market, and the Country Tavern. Whoda thunk it?
