Loading up on sushi at uchi is crazy to me. Their regular small plate menu is where Tyson Cole does his thing. One of my favorite meals anywhere in the country.

I imagine their sushi is good to. When I want sushi, I go to musashino. Mikado is ok too. Kyoto shouldn't really be on a best sushi list.
 
Does Round Rock count? If so, give Origami a go. This is one of my favorite places. Also try out Momiji off of 183 and 620. They have a GREAT all day happy hour on Sunday (I think it is Sun-Thurs actually). Both have great quality sushi. If you go to Origami, tell Tim that Jason sent you.

Origami in RR is very good. The owners founded Kyoto many years ago when it was the only Japanese restaurant in Austin. Haven't been to Kyoto in years, so don't know how it compares to the early days. Prices at Origami are reasonable and the food is great.

I haven't been to Kyoto in a couple of years...and I'm certainly no sushi expert, but I've always had great experiences there...sushi or otherwise.

I'm a sushi snob like Texas residents are BBQ snobs. Isn't all the sushi in Texas likely frozen? Recognizing that Austin is a trendy town I'd still assume that all sushi there has been frozen.

Luckily there is a wealth of quality fresh sushi in Seattle. I'm not sure I'll ever eat sushi at any place other than the West Coast again.

I love to hit the BBQ joints though when I visit my dad in Dallas.
