Super Bowl Party Spread

So here is the deal. I am going to have around 20 people over to the house for a Super Bowl party. I have a friend who is a culinary grad and loves to cook. He and I are trying to set some type of menu for the folks coming over that will be around 15 to 20 per person. That price will include some beer, wine, and whiskey. These people aren't heavy drinkers so there is no need to spend a ton on alcohol. I actually already have the whiskey and a couple bottles of champagne for the end of the game when the Pats finally lose... So here is my request.... set a menu for me that is unique and nice for 10 to 15 per person. Also remember I am in Temple so I don't have access to some high end items. although I am not against doing some shopping in Austin for it.

So let me hear 'em.
 
I am in charge of food for a large Super Bowl party at my friends house. We have people bring chips and dips and then we provide a few things to go along with it. Last year we did brisket tacos. We used a fully cooked HEB brisket, some queso fresco cheese, onion, and cilantro. We also cooked some smoked venison sausage with a BBQ dipping sauce.

This year I think we are adding some venison chili with homemade tamales. I also will be grilling some jalapeno peppers stuffed with crab meat and cheese and wrapped in bacon. I am still working on the complete menu, so I will be watching this thread.
 
we just hosted a small party (15 or so folks) at the house yesterday for the playoffs. I probably spent less than $200 and that included a few beers and some diet coke.

Items I made:
- Fresh salsa
- 20lbs brisket (11lb and 9lb)
- Grilled Chicken thighs (marinated in teriyaki, olive oil, garlic, salt, pepper)
- Couscous stuffed tomatoes (couscous stuffing included feta crumbles, olive oil, thyme, dill, salt, pepper)
- Tortellini Pasta Salad (w/ sundried tomatoes, spinach, red onion, and homeade dressing - olive oil, red wine vinegar, garlic, lemon zest, lemon juice, salt, pepper, basil)
- Ranch style beans w/ diced onion
- Chewy Fudge Brownies (box of brownie mix)

Even though I told people not to bring anything, a few did, mostly app type stuff:

(the couple that brought this also brought their 2 kids, which is why they made it. Adults wound up eating most of it)
Sweet corn cornbread -- pretty good stuff
 
I, too, will be checking my PMs for an invite to Beef's party.

You definitely need a good dip for a Superbowl party. I'm a big fan of queso with chorizo in it.
 
Two recipes that are simple to make but don't taste like they are:

Superbowl Dip
1 package Jimmie Dean Sausage
1 package cream cheese
1 can Ro Tel

Brown sausage, add cream cheese and Ro Tel simmer until the cream cheese is melted and ingredients are well mixed.
Chill. Pull from fridge about 30 mins before consumption to allow to soften, eat with Fritos.

This sounds to easy to be good but believe me, it taste's great.

Stuffed Jalapenos

3 26 oz. cans of whole Jalapenos ( I buy a brand called FARO, they are already cut in half & deseeded you will need about 4 cans)
3-8oz. Pkgs. Of Cream Cheese – softened
1-Red bell pepper seeded and chopped fine in the processor
2-Bunch of green onion– chopped fine in the processor
1 Tsp of garlic powder to taste
1 Pkg. Velveeta (American) shredded cheese

Process red pepper, then onion. After I process them, I wrap them in a paper towel to squeeze out the moisture (this way they cheese won’t be runny) Soften cream cheese. Stir in the red pepper and green onion and the garlic powder to the cream cheese. Stir in the Velveeta. Chill.

(If you don’t use FARO jalapenos)
Meanwhile, split whole Jalapenos, seed and lay on paper towels to dry.
Stuff mixture into halved peppers and chill overnight.

Makes about 80 stuffed peppers

The japs sound simple but are absolutely fantastic. We make about 160 of them for every tailgate and they are always the first thing we run out of.
 
Thank you for the responses that I got for this thread. I did want to update you with what we have so far on the menu for sure.

1. broiled shrimp cocktail.
2. grilled salmon marinated in dill and vodka soaked cheesecloth
3. roasted leg of lamb with Garlic/rosemary/mint and red wine
4. butter and garlic seared new potatoes with creamy horshradish sauce
5. cooked fresh leaf spinach.
6. queso with meat served with chips
7. veggie tray.

and I think I am going to add some grilled japs to that list, but that is what we have so far.

we will have Shinre, red wine, and Knob creek to drink.

Any thing major we are missing?
 
You know your crowd better than I do, but is that going to be enough "Super Bowl Food" for them? Seeing that you said they weren't big drinkers, it definitely could be a somewhat sophisticated crowd. I just wanted to make sure your buddy's culinary background wasn't fancying things up too much. If it's a worry, add something beef and or fried.
 
Bacon Wrapped Water Chestnuts

Whole water chestnuts (not sliced)
Center cut bacon.
Toothpicks

Cut 1 piece of bacon into thirds.
Wrap it around water chestnut (it should overlap enough to stick a toothpick in it to hold the bacon on)
Bake on a cookie sheet at around 350 until bacon is done.
Usually about 30 to 45 minutes.

Serve with your favorite dipping sauce.

Barbecue sauce is very good.
Any sour cream type dip.
Ranch Dressing.
Or eat them plain.

But be warned.......they are highly addictive and they will go fast.
 
3 yard, we will get som preztels and maybe even a cold cuts tray. We will have a variety of nuts as well. Those 'finger' type foods will be there, but they aren't anything really exciting and there isn't much to prepare them. Good point though, because I have worried that we don't have enough 'munchies'
 
I "chickened out" so to speak and ordered a huge tray of wings with varying degrees of heat so that kids and adults will like them. I've gone the brisket and sandwich tray route in the past and have found that simplicity is the way to go for a Super bowl party.
 
I just finished up my Super Bowl Menu for our party. Here are the highlights.

Brisket Tacos
- brisket, queso fresco cheese, onion, cilantro, lime

Venison Sausage Tray (with cheese)
- jap/cheese venison summer sausage, grilled jap/cheese smoked venison sausage, crackers, cheddar cheese squares, pepper jack cheese squares

Venison Stuffed Jalapeños
- Venison Breakfast Sausage/Cheese/ Cream Cheese wrapped in Bacon and grilled

White Chorizo Cheese Dip
- Brown Chorizo and melted Queso Blanco Cheese
 
For the first half, we had a Mediterranean snack theme going with pita, hummus, Kalamata olives, spiced olive oil dipping sauce, feta cheese, stuffed grape leaves, Tuscan salami.

At the half, I grilled ribeyes and served with Danish blue cheese crumbles and ancho-mashed potatoes.

Mmmmmm.

Just reporting on how it went. We had about 20 people come over and had a great time. The lamb turned out great, as did the salmon, and the potatoes and spinach. We put out some cheX mix for munchies as well as assorted nuts, chips and queso, and M&Ms. I think that everyone had their fill.
