Wusthof Classic 7" Hollow-Ground Santoku:

My first Wusthof. I'm excited.

Wusthof classic - the wife had a williams-sonoma gift card that she let me have to defray the cost of this knife (c-note). I'm going to use the heck out of this for the briskets, pork loin, and other large cuts of dead animal that I smoke. Awesome knife - combines the blade pockets of the Santoku with the traditional blade strength and length of a carver.
 
I've got a Shun santoku myself, but I do like the Wusthofs. Regardless, once you use a real good knife it's really hard to use anything else.
 
I ended up going w/ the J.A. Henckels Twin Cuisine line - the handles fit my hand better, but these are all great knives. It's amazing going from a cheapo block set to these knives - kinda like swapping out a Ford Taurus for a Ferrari or something.
