Sugar Free Holiday Baking

I'm luckily enough to have a long vacation coming up and plan on doing some baking before Christmas. My grandfather loves sweets; however, in the past year he has battled pancreatic cancer. This has left him on a low/no sugar diet.

Since I'm not too familiar with sugar free baking, does anyone have some good recipes? I'll probably make him a few things, so anything from cookies to pies, etc. will be great.

Also, since keeping sugar out of his food is a health issue, consider calling a nutritionist about your recipes or whatever you plan to use to sweeten the food.
