I saw this recipe on diners, drive ins, and dives. It comes from Bob's Steakhouse (I think) down in Clear Lake. They are called armadillo eggs. They take their house smoked brisket and shred it. They then mix with bbq sauce and monterey jack cheese. They then stuff green jalapenos with this mixture. Flour, egg wash, and bread crumbs then deep fry. I guess you could skip the breading; wrap in bacon and throw on the smoker. Gonna try these on the smoker this weekend.
I don't like the pure cream cheese stuffing in the jalapenos, It's just too rich and not enough taste. I do really like though to mix about 1/2 ream cheese and half cheddar. Wrap the jalapeno in Bacon and cook until the bacon;s a little crispy and the jalapeno is not.
