Steak sauces and toppings

Beef

I usually do not put anything on my steak, but I am trying something a little different. This meal will be cooked on a campfire with a grill with no electricity on site. I am leaning towards a mixture of Ribeye's and NY Strips steaks. I am cooking for 6 - 8 people.

Here are the two sauces/toppings I am thinking and need some help with them.

1. Topped with fried crawfish tails and port wine demi glace

2. Grilled seasoned shrimp, rich Italian cheeses and herbs
* I picked this up from Applebee's and really like it.

I am open to all suggestions for easy sauces/toppings I can prepare ahead of time or over the camp fire. I am going to pair this with Beer grilled corn with Chile Butter (from Hornfans.com), Sweet Potato French Fries, Dutch Oven Cobbler with Homemade Ice Cream. I will be starting off with either a Wild Game Kabob or Bacon/Cheese/Japeleno wrapped Quail.

please let us know where to be and what time.

...sounds great to me.

I made this with chicken the other night, but will work with flank steak

I was grilling the chicken and when it was 3/4 done, I put pico de gallo in a heated fajita skillet on the grill with some oilve oil

I cooked until tender then spooned it on the chicken-- and covered the pico with grated white cheese

at this point you could add some red enchilada sauce and something along the lines of tampiquena steak

garnish with avacado slices--man I'm hungry now and have 2 more days tillI can eat silid food--damn wisdom teeth!!!
