Steak Marinade

Gotta love Hornfans

guy asks for a marinade and the steak purists come out with the "salt and pepper" only stuff

there is nothing wrong with a nice marinade
 
If i'm going to marinade, I like Allegro(sp?) if I have a few hours, or Worchester or Dale's if I only have 30 minutes or so.

Sometimes I do, sometimes I don't.
 
I could be wrong for doing this, but I marinate in red wine and olive oil with a mixture of my own spices. I also put in a few dashes of Worchestershire as well.
 
For steaks, the higher the quality of steak, the less I use.

For higher quality steaks, I just go with sea salt, pepper, just a little bit of red pepper, a thinly sliced then mashed up clove of garlic and a little bit of oil. I put it it all in a ziploc bag to evenly distribute it and just leave it in there until i get the grill going. I might melt 1/2 a spoonful of whipped butter on each steak before taking them off.

On lesser quality steaks, it depends on my mood and whats in the cupboard/fridge, but here are two I use:
Stubbs Pork Marinade - supposedly for pork, but it's great on just about anything, I think it's much better than their beef marinade.
soy sauce/limes/pineapple juice. Good for fajitas, I usually let it soak for at least an hour. Could also substitute/add orange juice.
 
Marinate overnight in Stubb's beef marinade. It's outstanding.

Shiner Bock, a dash or two of Worchester with a little lime juice. But for the most part salt and pepper only.
 
For a choice or prime steak just use a simple steak rub. You must grill on high heat but start with the meat close to room temp. Rub the steak just before cooking as there is no need for spending time marinating. Sear on each side for about 3 minutes then flip occasionally until you get the cooking desired.

Gently touch your index finger to your thumb and feel the meat at the base of your thumb then the steak. That is rare. For medium touch your middle finger and you get medium. For well done touch your ring finger.

I prefer the birdie firmness and eat juicy steak.
 
Technically even fajitas are steaks (skirt steak).

That said, I grilled some steaks last night and lightly put some olive oil on the steaks. Then used some pepper, salt, garlic powder, oregano and paprika. I did, however, put way too much rub on. I tasted too much garlic powder. Not making that mistake next time.
 
lowry's mesquite marinade and montreal steak seasoning--if sensitive to salt add some white wine to soften salt-- it's simply the best

I had 3 angus ribeyes cut for me-3/4 inch thick and marinated 1 hr-- grill super hot with mesquite chips-- 5 minutes each side 1/4 turn at 2.5 minutes-- perfect steak--- grilled squash with italian marinade and cream of spinach-- the best meal ever
 
Try this.....

1/2 cup Beer
1/2 cup Soy
1/2 cup Worcestershire
1/2 cup Coffee (cold)

Sound strange but it is great on steaks.
 
I used to make a marinade that was 1/3 Stubb's spicy BBQ sauce, 2/3 Worchestershire...then squeeze the juice from a 1/4 of a lime, and put salt, pepper, garlic salt in....good stuff.
 
First off....buy good meat. I buy Choice or Prime mostly....but with the economy these days, got allured by the HEB $3.99/lb T-Bone add this week. I seasoned with Adams Val Verde rub, EVOO, aged Balsamic, and Worschestershire. Let me tell you....it was the best steak I've made in years!!! HEB has so much better meat than the rest of the big grocers. I damn sure can cook...so I know the difference. Get on them 3.99 T-Bones baby!!!
