Stand Mixer

Looking for a stand mixer (large batches of masa for tamales). I don't want to plunk down the money for a big Hobart, but I hear they are great. I need a good countertop mixer, the meat grinding attachment, and if it has something for pasta that would be great, too.

I was all but sold on the KitchenAid because of the great reputation, but I hear there are problems with the 6 quart professional series.

I don't think I want much bigger than a 7 quart, because I will still do some things around the house like pancakes on Saturday morning. I don't want to do a quart of mix in a 20 quart mixer.

Kitchen aid generally makes a darn good product, though the wattages (power) varies along with price.

You can find used Hobart equipment in the papet occasionally in the "restaurant supply" heading.

Assuming you don't make tamales every week!

OK the single best think about our kitchenaid- PANCAKES!

Now the bad thing is the wonderful fluffy nature of the pancakes when you whip the egg whites is that ALL other pancakes become a let down. Sort of sucks to even attempt to order pancakes anywhere now...

P.S. - if you are buying a stand mixer that means you will probably be doing some baking as well. Do yourself a favor right now and go buy an EXOPAT. It is the best thing for baking pastries, cookies and even biscuits known to man!
 
OK these pancakes are addictive and WILL ruin you for restaurant bought pancakes at kirby Lane or anywhere else.

OK- This is actually out of the Junior League Cook of Houston

2 eggs, seperated
2 cups sifted flour
1 tablespoon salt
2 cups milk
1/2 cup margarine, melted
1 tablespoon baking powder

The only thing you use the mixer for is to beat the egg whites until stiff

Beat Egg Yolks (we do this with hand whisk) sift together flour, sugar and salt. Add flour mixture and milk alternately to egg yolks. Stir in margarine. beat Egg whites (with mixer)until stiff and FOLD into batter. DO NOT STIR JUST FOLD IN! Add baking powder last this batter will keep for several days in the refrigerator (but we wipe it out every time)

If you are going to do this regularly I suggest buying a griddle to lace over two burners. We like to let the griddle get pretty darn hot and make "flapjacks."
 
I love my Kitchen Aid. We have had it for about 8 years and I use it alot. It's just the standard size, nothing for tamales! I used a Hobart when I worked in the kitchen at a camp years ago and enjoyed it, but it was a little large for everyday home use! I think you'd be happy with either.
