Fried Rice

White rice--however much is made with a cup of uncooked grains
SPAM One can "Hickory smoke" flavor if available
Bunch of green onions- smallest diameter
4 to 6 eggs
2 Tablespoons peanut oil
Soy sauce, Sri Racha, toasted sesame oil

Break up the cooked rice if it is cold
Cut the Spam into pieces about half the size of your little finger, or smaller
Cut the whole bunch of green onions into 1" pieces-- all the green that is fresh.
Break the eggs into a bowl and stir them up

Put a wok on the highest heat, til it smokes, then add the oil and wait for it to smoke too.
Add the Spam and stir it until it is browning up nicely
Add the onions and stir them in briefly
Add the scrambled eggs, and stir them quickly, then, just as they set
Add the rice and stir it up til everything is hot.

Serve to 2 or 3 people, depending on how hungry they are.
Have some soy sauce as well as Sri Racha for those who like a little heat; maybe toasted sesame oil also.

This will stick with you all day. Don't knock Spam. I read somewhere that the Red Army's diet during WW2 was, for the most part, split pea soup made with Lend Lease Spam.
 
I grew up eating Spam, though I like the light version a lot better.

My grandmother would send my grandfather cases of Spam during WWII so he could avoid eating beans for every meal. He was in the Navy in the Pacific, and would not eat beans again after the war until his death.

I guess if the navy had no SPAM in the Pacific that means that the Army Air Corps must have had all of it because I didn't know anything about SPAM until went to The University. Found out from my Mom that Dad wouldn't allow SPAM into the house because he ate so much of it in the South Pacific during WWII. He was a tech-sgt in a P-38 squadron in the 13th Air Force all over the South Pacific.


Here's a SPAM recipe that I like.

Spam Salad.

Take a can of spam and open it and put the spam on a plate and break it up into fine pieces using a fork. It'll crumble pretty easily. Take some sweet or dill relish or Mrs Renfro's Hot or Mild Chow Chow and mix in to the spam and add mayo to taste. Use as a sandwich filling. You can add other stuff to it to make it taste different, like chopped green onions or chopped olives or a little mustard or chopped hardboiled eggs, whatever you like. Easy and quick.
 
Next time I smoke a more legitimate meat on the BGE, I plan to throw a block of Spam into the smoke. If Okies can do bologna, I can do Spam. I do not expect real positive results, but what the hair (as the Chinese lady at the horse races said when someone spilled beer on her head).
 
SPAM potstickers:

potsticker wraps ( bought @ any asian market )
minced ginger
minced garlic
finely diced bamboo shoots and green onions
finely shredded napa cabbage
shot of sesame oil
LOW sodium soy sauce (SPAM is packed with salt)
mix
place in wrapper, fold
brown in pan w/ oil
pour in chicken stock
cover pan and cook w/ low heat
Enjoy!
 
Sliced Spam in a hot skillet to brown.

Mix a little brown sugar with some juice from a can of pineapple rings.

Place Spam in a baking dish and pour brown sugar mixture over the top.
Top with pineapple rings.

Bake until well heated.
 
We smoked some spareribs last night and they turned out very well. As mentioned on this thread above, I did put a block of Spam in the smoker.

Don't try this at home on your own. I am not a professional and it was ugly and not very tasty.

...or Lobster Thermidor a Crevette with a mornay sauce served in a Provencale manner with shallots and aubergines garnished with truffle pate, brandy and with a fried egg on top and spam.
 
Is anyone in Hawaii? I think I read somewhere that the per capita consumption of Spam is way the highest in Hawaii. There must be some recipes with poi or whatever...
 
Take Spam light, slice it up, cook it in a skillet, then put on wheat bread and eat. I loved it when I was a kid, and love it now, however the smell kills my wife. Strangely enough, my mother told me they would chicken fry it when she was a kid. Tried that once, and did not care for it.
 
Here is a Hawaiian Spam recipe:

SPAM MUSUBI
5 cups Cooked Sushi Rice (Room Temperature)
12 oz SPAM
4 Tblsp Mirin (Japanese cooking wine)
5 sheets Nori (seaweed) - cut in half lengthwise
6 Tblsp Soy Sauce
4 Tblsp Sugar
Furikake (a Japanese flavoring mix)

* Open SPAM can and remove SPAM, set aside. Open both ends of can and wash thoroughly.

* Cut SPAM into 10 slices and fry until crispy. Let drain.

* In another pan, combine Soy Sauce, Mirin, and Sugar. Bring to boil over medium-high heat and then reduce to low.

* Add the SPAM slices to the pan and make sure they are coated in the sauce. Simmer on low until sauce thickens and then remove SPAM.

* Lay the sheet of Nori on a clean surface. Place the clean SPAM can on the lower third of the Nori. Fill the mold (the SPAM can) with rice and press flat until the rice is 3/4" high.

* Sprinkle rice with Furikaki and the top with a piece of the SPAM.

* Remove the mold and place it in a bowl of water to keep it clean.

* Fold the Nori over the SPAM and Sushi Rice and roll until it is completely wrapped. Moisten the end of the Nori to seal.

* Repeat this for the rest of the SPAM slices.

Some of the ingredients would have to come from an Oriental Foods Market. We have several in the Copperas Cove/Killeen area.

Timely post. Went hunting this weekend and bagged a couple of spam - one male and one female. Was wondering the best way to cook them. Thanks!!!
