Probably a lot.

when you ask about digitally doctoring are talking photoshop or are you talking about touch up work?

If you are talking touch up work, for instance making the backgrounds a blur, then I'd say 100%. However this is no different then what a photographer did before digital cameras in a dark room. I doubt there was photoshop on the animals or other photos with the exception of the ones that are obvious.
