Smoking ribs the night before?

I'm trying to help plan a Christmas dinner, and part of the plan was to have about 8 racks of ribs. However, the timing of this would necessitate that I either cook the ribs the night before, finishing them off the day of or get up at 4AM to start the fire.

Anyone had to cook ribs the day before? If I smoke them for 2-3 hours and then wrap them in foil in a cooler, will they be good to go after being heated back up at 225 for an hour or two the next day, or will it turn out terrible?
