Smoking a Turkey

Any recommendations? I'm trying it for the first time this weekend (possibly in practice for Thanksgiving). I'm planning on using a lighter wood (maybe apple) because I figure it will take a while and I don't want it to be too smoky. But other than that I don't really know what I should do to preparea the bird.
 
Read Baboso's link about brining. Be sure to take the turkey out of the brine and let it set in the fridge for at least 8 hours. This is a huge step that a lot of people leave out. The link tells the reasoning behind doing this.

I have tried all of the different brining recipes on this link and in my opinion, the basic is just as good as the more complicated recipes.
 
I'm definitely smoking a turkey for Thanksgiving, but I can't have turkey and mashed potatoes without gravy. I saved the fat I trimmed off a brisket that I smoked last weekend and I think I'm going to use that as a base for the gravy. I just don't know if it'll be an overkill on the smokiness, however.

I realize I could just use turkey boullion, but I think the brisket fat will work well. Any thoughts/suggestions?
