I'm smokin 30 pounds in my bullet. I love this thing. I get up at 5:30 and it's still at 190. My nephew (4) always asks if we are having my brisket, and I only seem to cook it twice a year, so I'm loading up this time.
If you don't have one, a vacuum packer is the perfect companion for the smoke. You vacuum pack it and just tell them to simmer it in water, and it comes out great.
