smoked cheddar mac and cheese

they are serving this at the new brenners location in houston (old rainbow lodge).

it is, in a word, fantastic.

does anyone here cook this sort of thing? if so, recipe?

I bet you could substitute smoked cheddar into Tyler Florence's recipe and it would be pretty good.
