smoke/time ?

I have a WSM (Bullet), and want to smoke both a 12 lb. brisket and a 7 lb. boston butt. I don't have a yard, just a balcony, hence the WSM option.

Anyhow, is there a wood that I could use to smoke both of these meats at the same time? Hickory is better on pork, but not so much to my liking on brisket, etc...If there isn't a universal wook type for both of them, could I start smoking the brisket with type A, then, after a few hours, put the pork cut on and add type B wood? I want to knock both of these out at the same time if possible, so I can do other things this holiday weekend....

Oak is pretty popular in Texas. Pecan can be good too if you want a little more flavor. Or do a mix of wood types. You might taste the difference between wood types, but I bet nobody else at your bbq will be able to.

I like to use post oak with a bit of mesquite.

So, where do I go to find oak, post or other? I can find hickory, pecan and mesquite anywhere in those big net bags, but never see oak

I've had good results doing both brisket and pork ribs with pecan. I've not tried other parts of the pig, but I think it'd be a similar flavor (and probably still good).

If you are in the Austin area try these:

Gut Buster Ranch
Jeff or Tim
512-446-7323

Harley's Firewood
512-335-3326

Wherever you are located, you could probably post on Craig's List and find some.

You can also go to Home Depot and buy bags of hickory or mesquite wood there. Not chunks but split logs. I have done that before b/c I usually get my wood in Oak Hill but the last few times I have gone, they closed early or I missed them b/c they close so early....
