Simmering in the Oven?

Making chili for the Superbowl.

I just moved into a new place and the gas stove does not go low enough to properly simmer chili or soup. WIth the knob on the lowest setting, the pot is still too hot.

What oven temperature would be appropriate to simmer the chili after bringing the chili to temp on the stove?

I don't know about simmering in the oven -- I'd guess 225 F - 250 F, based on the fact that water boils at 212 F -- but what if you rigged something up that allowed you to elevate your pot off the stove burner by an inch or two? Maybe buy a cheap grill grate and set it on some coffee cups or something?
 
If you are relatively near a cooking store, like a Williams-Sonoma, they have heat diffusers. Or use a frying pan that is a little larger than your chili pot--and put the frying pan beneath the chili pot.
