Sika deer chili

I have some sika deer meat (ground) and would like to make some chili. Does anyone have recipe suggestions?
 
I have never tried sika, but deer is not deer. Axis and whitetail are very different. Depends on what the deer eats.

I have heard sika more gamey than most other exotics
based on my experience here's my rating of deer for taste-- axis, whitetail, then fallow-- I have heard blackbuck is great as well as nilgai. Elk is supposed to be "beefy" and some oryx summer sausage I had was good--but smoke can fix just about anything so I'm not sure

no big deal-- follow your favorite chii recipe-- spices knock out the gaminess-- add 2 tsps of brown sugar to 1/2 cup of hot water--let it disolve and add to the chili towards the end of the cooking process then let simmer some--it " softens " some of the harshness of even bad deer meat---- I had some fallow what must have lived off of cedar-- and it came out ok as chili or sausage
