I was at the coast a couple of weeks ago and picked up 3 lbs. of shrimp for dinner. I went to Mom's at the docks in Rockport. She usually has bigguns.
She'll slip in a few smaller ones in her "6-10" ct, but the quality is usually fresh, and she's open on Sunday when I am heading home.
First...coconut shrimp, Rachael Ray's recipe. My daughter liked these since they weren't as sweet as most coconut shrimp recipes. It needed something, so I made Emeril's tequila lime sauce.
Tequila Lime Sauce.
Ridiculously easy, and outstanding. I think it would go great on grilled chicken breasts or fish tacos.
I used the bigguns for the next entree. The smaller ones, remove heads, devein, etc. Leave the tail on.
The smell was incredible. I love shallots. And tequila.
Rachael Ray's Coconut Shrimp
The egg white batter and bread crumbs..I substituted panko, it works much better.
Cut up some limes, and have a shot. Or 2.
Hic... Good stuff. Just don't slip up with the chef's knife.
I made a **** load in the wok, deep fry in Canola oil.
Voila.
Next..Paul Prudhomme's Cajun BBQ shrimp. Do NOT wear a white shirt while preparing or eating this dish.
Spice mix, garlic, and a **** load of butter.
More intense smells. My daughter kept coming into the kitchen to see what smelled so good.
I crowded the shrimp a bit, it's better to leave room so they cook evenly.
Let's eat.
Go a little heavier with the sauce.
Serve with crusty French bread to soak it up.
